Understanding Food Poisoning: Causes and Symptoms

Food poisoning happens when you eat food or drink water that contains harmful bacteria, viruses, parasites, or toxins. These pathogens can grow in food when it is not stored, prepared, or cooked correctly. According to the Centers for Disease Control and Prevention, roughly 1 in 6 Americans gets food poisoning each year, with about 3,000 deaths occurring annually from foodborne illnesses. Understanding what causes food poisoning helps you recognize when you might have it and know what to expect.

Common bacteria that cause food poisoning include Salmonella, E. coli, and Campylobacter. Viruses like norovirus and hepatitis A also frequently cause outbreaks. These pathogens thrive in foods left at room temperature for more than two hours, in undercooked meats, in unpasteurized dairy products, and in produce that has been contaminated during growing or handling. Raw eggs, deli meats, and soft cheeses present particular risks for certain populations.

Symptoms of food poisoning typically start between 1 to 72 hours after eating contaminated food, though some cases take longer to develop. Most people experience nausea, vomiting, diarrhea, stomach cramps, and fever. Some cases involve only one or two symptoms, while others involve several. The severity depends on which pathogen caused the infection and how much of it you consumed. Most cases resolve on their own within a few days as your body's immune system fights off the infection.

• Nausea and loss of appetite
• Vomiting and stomach cramping
• Diarrhea (sometimes watery or bloody)
• Low-grade fever (usually under 101°F)
• Headache and body aches
• Weakness and fatigue

Practical takeaway: Keep a food diary for a few days before symptoms appear. Write down everything you ate and where it came from. This information helps you identify the source of your illness and can alert others if the food came from a restaurant or store.

When to Monitor at Home and When to Seek Medical Care

Most food poisoning cases can be managed safely at home without seeing a doctor. You can treat the basic symptoms yourself by resting, staying hydrated, and eating bland foods once you feel ready. However, certain situations require medical evaluation. Knowing the difference between manageable cases and serious cases helps you make the right decision about seeking care.

You can typically manage food poisoning at home if you are an otherwise healthy adult with mild to moderate symptoms. This means having some nausea and diarrhea but still being able to drink liquids and keep some food down. Mild fever, muscle aches, and fatigue are common and usually not cause for concern. Most healthy adults recover within 3 to 7 days.

Seek medical care if you experience signs of severe dehydration, such as dizziness when standing, extreme thirst, very dark urine, or no urination for 8 hours or more. Other reasons to contact a healthcare provider include bloody diarrhea, high fever (over 101.5°F), severe abdominal pain that does not improve with rest, signs of infection spreading (like swollen joints), or symptoms lasting more than a week. People with weakened immune systems, very young children, pregnant women, and adults over 65 should contact a healthcare provider for any suspected food poisoning, as complications are more likely in these groups.

• Seek medical care for bloody or black stools
• Contact a provider if you cannot keep any liquids down for more than a few hours
• Get help if you have severe abdominal pain or cramping
• Call a provider if fever is very high or lasts more than 3 days
• Seek care if you are in a high-risk group (elderly, pregnant, very young, or immunocompromised)
• Get evaluated if symptoms are still present after 7 days

Practical takeaway: Save your healthcare provider's phone number and your local poison control center number (1-800-222-1222 in the United States) in your phone. These are worth having before you get sick, so you do not have to search for them when you are feeling bad.

Staying Hydrated: The Most Important Step

Dehydration is the main concern with food poisoning because vomiting and diarrhea cause you to lose fluids and electrolytes rapidly. Your body needs these fluids to function. Replacing lost fluids is more important than eating solid food when dealing with food poisoning. The goal is to drink small amounts frequently rather than large amounts at once, which can trigger more vomiting.

Water alone is not the best choice for rehydration during food poisoning. While water is necessary, your body also needs electrolytes—sodium, potassium, and chloride—to absorb fluids properly and maintain body functions. Oral rehydration solutions contain the right balance of water, salt, and sugar to help your body absorb fluids more effectively. Common over-the-counter options include products labeled as oral rehydration salts or solutions. These come as powders you mix with water or as ready-to-drink liquids. Generic versions work just as well as name brands and cost less.

If you do not have oral rehydration solution on hand, you can make one at home. Mix 6 teaspoons of sugar and ½ teaspoon of salt into 1 liter (about 4 cups) of clean water. Stir until dissolved. This simple mixture provides the electrolytes your body needs. Other drinks that help with hydration include clear broths, sports drinks diluted with water, coconut water, and flat ginger ale or lemon-lime soda (the sugar helps absorption, though these are not ideal long-term solutions). Avoid caffeine, alcohol, and high-fat foods while recovering, as these can worsen symptoms.

• Drink small amounts every 15 to 20 minutes rather than large amounts at once
• Use oral rehydration solution as your primary replacement fluid
• Sip clear broths or weak tea if you do not have rehydration solution
• Eat ice chips or popsicles if drinking feels too difficult
• Avoid milk, juice, and sugary drinks until you are recovering
• Continue drinking even after symptoms improve to fully rehydrate

Practical takeaway: Keep packets of oral rehydration solution in your home medicine cabinet and in your travel bag. They are inexpensive, shelf-stable for years, and take up almost no space. Having them available means you can start rehydration immediately when symptoms begin.

Managing Symptoms with Rest and Proper Nutrition

Resting your digestive system while recovering from food poisoning helps your body heal faster. This means eating bland, easy-to-digest foods in small portions and avoiding anything that might irritate your stomach. Your digestive system is already inflamed and stressed from the infection, so giving it a break matters. Most people do not feel hungry during the acute phase anyway, so do not force yourself to eat large meals.

Start introducing food only after you have gone a few hours without vomiting and are able to drink fluids without them coming back up. Begin with small amounts of foods that are bland, low in fat, and easy to digest. The popular memory aid "BRAT diet" refers to bananas, rice, applesauce, and toast—foods that are mild and unlikely to cause stomach upset. Other acceptable foods include crackers, plain chicken or turkey, boiled potatoes, clear soups, and plain pasta. Add foods gradually, spacing them a few hours apart. If your stomach tolerates the first foods well, slowly expand to other options.

Avoid certain foods while recovering. High-fat foods like fried foods, butter, and cream slow digestion and can cause cramping and more diarrhea. Spicy foods irritate an already inflamed stomach lining. Dairy products may be harder to digest temporarily. Fibrous foods like beans, raw vegetables, and whole grains should wait until you are mostly better. Caffeine,
