What Is Lemon Balm and Where Does It Come From?

Lemon balm is a leafy herb that belongs to the mint family. Its scientific name is Melissa officinalis, and it has been used for centuries across Europe, the Middle East, and Asia. The plant grows as a bushy perennial, typically reaching between 12 and 24 inches in height. It produces small white or pale yellow flowers during the summer months, but gardeners and cooks primarily harvest the leaves for their flavor and properties.

The name "lemon balm" comes from the strong lemon scent and flavor the leaves release when crushed or brushed against. Ancient Greek beekeepers called the plant "melissa," which means "honey bee" in Greek, because they believed bees were naturally drawn to the herb. Historical records show that lemon balm was cultivated in European monastery gardens during the Middle Ages, where monks used it in teas and remedies.

Lemon balm grows well in temperate climates and prefers full sun to partial shade. The herb thrives in well-draining soil and does not require extensive maintenance. Many gardeners find that lemon balm spreads readily, sometimes aggressively, so containing it in pots or designated garden areas works well. The plant produces seeds prolifically, and it also spreads through underground runners called rhizomes.

You can purchase lemon balm in several forms at grocery stores, farmers markets, or garden centers. Fresh bundles of lemon balm leaves are commonly available during growing seasons. Dried lemon balm appears in loose-leaf form or pre-packaged tea bags. Some specialty food stores and online retailers sell lemon balm essential oil or concentrated extracts. Growing your own lemon balm at home is also straightforward—seeds germinate readily, and established plants require minimal care.

Takeaway: Lemon balm is a hardy, accessible herb with centuries of historical use. Whether you buy it fresh, dried, or grow it yourself, understanding its origins and characteristics helps you select and use it effectively in your kitchen and home.

Lemon Balm in Cooking and Beverages

Fresh lemon balm leaves add a bright, citrusy note to a wide range of dishes and drinks. The herb's flavor is more delicate than dried versions, making fresh leaves ideal for garnishing finished dishes where you want the lemon taste to shine through. Cooks often tear or chop fresh lemon balm and sprinkle it over desserts, seafood, salads, and fruit-based dishes. The leaves pair particularly well with fish, chicken, and light cream sauces.

For beverages, lemon balm creates a refreshing tea that can be served hot or cold. To make a basic cup of lemon balm tea, steep 5 to 10 fresh leaves (or 1 to 2 teaspoons of dried leaves) in hot water for 5 to 10 minutes, then strain. Many people drink lemon balm tea in the afternoon or evening. Studies published in journals like Phytotherapy Research have examined the herb's traditional uses, though more research continues. Some commercial tea blends combine lemon balm with other herbs like chamomile or lavender.

The herb works well in cocktails and mocktails. Bartenders muddle fresh lemon balm leaves with sugar at the bottom of a glass to create a fragrant base for drinks. This technique releases the leaf's essential oils and distributes the flavor throughout the beverage. Lemon balm also infuses nicely into simple syrups—a method that involves heating sugar and water, then adding fresh leaves to steep as the mixture cools. These syrups store in the refrigerator for up to two weeks and flavor both alcoholic and non-alcoholic drinks.

In baking and desserts, lemon balm brings subtle flavor to cookies, cakes, and custards. Some bakers infuse cream or milk with lemon balm leaves before using it in recipes, straining out the solids before proceeding. Lemon balm sugar—made by layering dried leaves with granulated sugar in a jar for several days—adds mild flavor to shortbread cookies and frosting. The herb also complements berry desserts, lemon-based sweets, and fruit sorbets.

Takeaway: Lemon balm transitions easily into your kitchen routine through teas, fresh garnishes, infused syrups, and baked goods. Start with simple applications like steeping fresh leaves for tea or adding them to cold water, then experiment with more complex uses as you become comfortable with the herb's flavor profile.

Lemon Balm for Home Wellness Routines

Many households incorporate lemon balm into daily wellness practices, though individual experiences vary. The herb has been used traditionally in herbal tea blends designed to support relaxation and calm. A 2015 study in Nutrients journal found that participants who consumed lemon balm extract reported subjective feelings of calmness during stressful activities, though researchers noted that larger and longer-term studies would strengthen these findings. Some people keep a small potted lemon balm plant in their bedroom or living room, simply enjoying the aroma when they brush against the leaves.

A common home wellness practice involves making a lemon balm infusion for evening routines. An infusion differs from a quick tea steep—it typically involves pouring hot water over dried lemon balm leaves and allowing them to steep for 15 to 20 minutes or longer. Some people prepare infusions in bulk during the day and refrigerate them to drink cool throughout the week. Others add fresh lemon balm to a warm bath by placing leaves in a cotton sachet or small mesh bag that floats in the water.

Lemon balm also appears in homemade skincare preparations. A simple infusion can be cooled and used as a facial rinse or added to clay masks. Some people combine dried lemon balm with other botanicals like calendula or chamomile to create custom blends for specific skin concerns. It is important to test any new preparation on a small area of skin first, as individual sensitivities vary. People with sensitive skin should approach new ingredients cautiously.

The herb's aroma makes it useful in household freshening applications. Dried lemon balm can be placed in small muslin pouches and tucked into drawers, closets, or shelves to impart a light, fresh scent. Some people simmer dried lemon balm with other herbs like rosemary or lavender in water on the stovetop to create a natural room fragrance. This method costs very little and provides an alternative to commercial air fresheners. A small handful of dried lemon balm typically creates noticeable aroma for 30 to 60 minutes of simmering.

Takeaway: Lemon balm fits into wellness routines through teas, infusions, baths, and aromatic applications. Experiment with one or two methods that appeal to you, keeping in mind that results and preferences vary from person to person.

Growing and Harvesting Lemon Balm at Home

Starting lemon balm from seed is one of the most economical ways to have a steady supply. Seeds are inexpensive and widely available from garden suppliers. To start seeds indoors, sow them on the surface of moist seed-starting soil in small containers about 6 to 8 weeks before your last spring frost date. Lemon balm seeds require light to germinate, so do not cover them with soil. Keep the soil consistently moist but not waterlogged, and maintain temperatures between 65 and 75 degrees Fahrenheit. Germination typically occurs within 7 to 14 days. Once seedlings develop two sets of true leaves, thin them or transplant them into individual small pots.

Alternatively, you can purchase established lemon balm plants from nurseries and transplant them directly into your garden or containers. Container growing works particularly well for lemon balm because it controls the plant's tendency to spread. Use a pot at least 8 inches in diameter with drainage holes and fill it with quality potting soil. Place the pot in a location that receives at least 6 hours of direct sunlight daily. Water when the top inch of soil feels dry, typically every 2 to 3 days during warm weather. Lemon balm is quite hardy and tolerates dry spells once established, though it produces more vigorous growth with consistent moisture.
