Learn How To Prepare Canned Salmon

Understanding the Basics of Canned Salmon

Canned salmon is a shelf-stable protein source that has been processed and preserved in cans, making it convenient for storage and quick meal preparation. According to the National Fisheries Institute, Americans consume approximately 600 million pounds of canned seafood annually, with canned salmon representing a significant portion of that consumption. The salmon used in canned products typically includes species such as pink salmon, sockeye salmon, and chum salmon, each offering different flavor profiles and textures.

When salmon is canned, it undergoes a heat treatment process that kills harmful bacteria and extends shelf life to several years when stored properly. Most canned salmon products contain the entire fish, including the bones and skin, which are softened during the canning process and become edible. These components provide additional nutritional value, including calcium from the bones and omega-3 fatty acids throughout. A standard 14.75-ounce can of canned salmon typically contains about 20 grams of protein and provides approximately 206 calories.

Canned salmon comes in several varieties. Red or sockeye salmon has a deeper color and richer flavor. Pink salmon, the most affordable option, has a milder taste and lighter color. Chum salmon falls between the two in terms of color and flavor intensity. Some canned salmon products include added salt, while others are labeled as low-sodium or salt-free. Reading the label helps you understand what additives or preservatives the product contains, though most canned salmon relies on the canning process itself for preservation rather than additional chemicals.

Practical Takeaway: Before preparing canned salmon, check the label to understand what type of salmon you have, the sodium content, and whether any additives are present. This information helps you plan how to season and prepare your dish appropriately.

Selecting and Storing Canned Salmon Properly

When selecting canned salmon at the store, examine the can for any dents, bulges, or damage. The U.S. Food and Drug Administration recommends avoiding cans with deep dents that could compromise the seal or shallow dents on flat surfaces. The can should feel solid when shaken, with no unusual sounds or leaking. Check the "best by" or "use by" date on the label, though properly stored canned salmon can remain safe to eat for several years beyond this date.

Storage conditions significantly affect how long canned salmon remains in good condition. Canned salmon should be stored in a cool, dry place away from direct sunlight and heat sources. Ideal storage temperatures range between 50 and 70 degrees Fahrenheit. A pantry, cupboard, or basement typically provides appropriate conditions. Avoid storing canned salmon near pipes that leak, as moisture can cause rust and compromise the can's integrity. The pantry should also be protected from temperature fluctuations, so avoid storing salmon above stoves or near heating vents.

Once you open a can of salmon, transfer any unused portions to an airtight container and refrigerate immediately. According to food safety guidelines, opened canned salmon should be used within 3 to 4 days when properly refrigerated. If you don't plan to use the entire can at once, place a piece of plastic wrap directly on the surface of the salmon before putting the lid on the container—this prevents oxidation and odor absorption. You can also freeze opened canned salmon in a freezer-safe container for up to 3 months, though this may affect the texture slightly when thawed.

Practical Takeaway: Purchase canned salmon without visible damage, store it in a cool, dry location away from temperature fluctuations, and transfer leftover portions to airtight containers within the refrigerator or freezer based on your timeline for use.

Draining and Rinsing Techniques

The first step in preparing canned salmon is draining the liquid from the can. Place a fine-mesh strainer over a bowl and pour the contents of the can into it. The liquid, called "liquor," consists of water, salt, and oils that accumulated during the canning process. For recipes where you want to control sodium content, draining this liquid reduces the overall salt in your dish. Some cooks save this liquid for soups or broths, as it contains flavor compounds and nutrients leached from the fish.

After draining, you have the option to rinse the salmon under cool running water. Rinsing further reduces sodium content—studies show that rinsing canned salmon under water for 30 seconds can reduce sodium by approximately 25 to 30 percent. Use your fingers or a fork to gently break apart the salmon pieces while rinsing, which allows water to reach the interior surfaces. This technique is particularly useful if you're preparing the salmon for children or individuals monitoring sodium intake. If you prefer not to rinse because you want to retain more flavor and nutrients, that choice is also valid for many recipes.

After draining and rinsing, place the salmon in a clean bowl or directly on a clean cutting board. Using a fork, gently flake the salmon into smaller pieces, breaking apart any large sections while removing any small bones you notice—though most bones are soft enough to eat. Look for dark skin and any stray pin bones, which occasionally appear even in processed canned salmon. The flaking process also helps you assess the texture and quality of the salmon and makes it easier to incorporate into recipes. Some recipes call for larger salmon chunks, so adjust your flaking based on the dish you're preparing.

Practical Takeaway: Drain the liquid from the can, rinse the salmon if you want to reduce sodium, and flake the salmon gently with a fork while removing any visible bones or skin according to your preferences and recipe requirements.

Removing Bones and Skin Preparation

One significant advantage of canned salmon is that the bones become soft and edible during the canning process. The high heat and pressure used in canning soften the calcium structure of the bones, making them similar in texture to the surrounding flesh. If you prefer to keep the bones because they add calcium to your diet—canned salmon with bones provides approximately 200 mg of calcium per 3-ounce serving—they can remain in your preparation. Many recipes for salmon cakes, patties, and salads use the entire fish, including bones, without any texture issues.

If you prefer to remove bones, this process requires patience rather than special tools. After flaking the salmon with a fork, spread it out on a clean plate or cutting board. Look for the small white fragments of bone throughout the flesh. Using your fingers or a pair of fine-tipped tweezers, pick out these bone pieces one by one. Occasionally, you'll find a slightly larger piece of bone that wasn't fully softened—these are easy to spot and remove. Some people use their tongue to feel for bone fragments in their mouth while eating, removing them as they're discovered, which is a common practice when eating canned salmon.

The skin in canned salmon is also completely edible and contains beneficial nutrients. The skin provides additional omega-3 fatty acids and contributes to the texture of dishes. If you don't enjoy the appearance or texture of visible skin, you can remove it by gently separating it from the flesh with your fingers. The skin typically comes away in large pieces. However, many recipes benefit from keeping the skin mixed throughout, as it adds nutritional value and helps bind ingredients together in preparations like salmon cakes or casseroles. The choice to keep or remove both bones and skin depends on your personal preference and the specific recipe you're preparing.

Practical Takeaway: Decide whether to keep or remove bones and skin based on your nutritional goals and recipe needs—bones are safe and provide calcium, while skin adds omega-3 fatty acids and binding properties to cooked dishes.

Basic Cooking and Flavor Preparation Methods

Canned salmon is already fully cooked during the canning process, so it doesn't require cooking for food safety. However, heating it during recipe preparation can enhance flavors and improve texture in many dishes. One simple method is heating canned salmon gently in a skillet over medium-low heat with a small amount of butter or oil. Add the drained and flaked salmon to the skillet and stir occasionally for 2 to 3 minutes until it's warmed through. This gentle heating helps blend flavors if you're adding seasonings and creates a more cohesive texture.
