Learn How to Make Pork Belly at Home

Understanding Pork Belly Basics

Pork belly is a cut of meat that comes from the underside of a pig, between the front and back legs. This area contains layers of muscle interspersed with fat, which is why it has such a distinctive appearance. When you look at a cross-section of pork belly, you'll see alternating bands of lean meat and fat—this is sometimes called "bacon on the bone" because it resembles the structure of bacon before it's been cured and smoked.

The pork belly cut has become increasingly popular in home cooking over the past 15 years, particularly in restaurants and among home cooks interested in cooking techniques from Asian, European, and American cuisines. According to the National Pork Board, pork belly consumption in the United States increased by approximately 300% between 2010 and 2020, reflecting growing culinary interest in this once-underutilized cut.

What makes pork belly special is its texture and flavor profile. The fat content means that when cooked properly, the meat becomes incredibly tender and flavorful. The skin, if left intact, can become crispy and crackling—a highly prized texture in Chinese roast pork and other dishes. The meat itself has a rich, savory taste that benefits from low and slow cooking methods that render the fat and develop depth of flavor.

When purchasing pork belly, you'll typically find it sold in two forms: with the skin on or with the skin removed. Skin-on pork belly is ideal if you want to achieve crispy crackling, while skinless pork belly may be preferable for certain braises or stews. Most pork belly pieces weigh between 2 and 5 pounds, though you can find larger wholesale cuts.

Practical Takeaway: Choose skin-on pork belly if you want to try crackling; select skinless if you plan to braise or stew. Look for meat with good color (pinkish) and white or pale fat. Avoid pieces that appear gray or have an off smell.

Selecting and Preparing Your Pork Belly

Finding quality pork belly starts with knowing where to look. While some supermarkets carry it in their meat section, you'll often have better selection and pricing at Asian markets, Latin markets, specialty butcher shops, or wholesale stores like Costco. Many butchers will also order pork belly for you if you ask. When examining pork belly at the store, look for pieces with a good balance of meat and fat—not so fatty that it's mostly rendered fat when cooked, but fatty enough to stay moist and flavorful.

The skin, if present, should be clean and relatively smooth. Some home cooks prefer to score the skin (make shallow cuts across it in a crosshatch pattern) before cooking to help it crisp up. If you're purchasing from a butcher, ask them to score it for you. The meat underneath the skin should be firm and pink, not soft or gray. Once you bring pork belly home, refrigerate it immediately if you're not cooking it the same day. Properly stored in the coldest part of your refrigerator, pork belly keeps for about 3 to 4 days.

Before cooking, remove the pork belly from the refrigerator 30 to 45 minutes before you plan to cook it. This allows it to reach closer to room temperature, which promotes more even cooking. If the skin is present and you want crispy crackling, pat it very dry with paper towels—any moisture on the surface will prevent crisping. Some cooks rub the skin with salt and a small amount of oil, which encourages browning and helps draw out moisture from the skin.

If your pork belly came without a label showing whether it was humanely raised or pasture-raised, ask the butcher or store staff about sourcing. Pork belly from pigs raised with good conditions often has better flavor and color. Pasture-raised or heritage breed pork tends to have more complex flavor and better meat-to-fat distribution, though it typically costs more than conventional pork belly.

Practical Takeaway: Shop at specialty butchers or Asian markets for better selection. Always pat the skin dry before cooking. Bring meat to room temperature before cooking for more even results. Store properly and use within 3-4 days.

Roasting Pork Belly for Crispy Skin

Roasting is one of the most popular methods for cooking pork belly at home because it produces a combination of crispy skin (if you have skin-on pork belly) and tender, moist meat. The key to successful roasting involves managing two different cooking phases: a low-temperature phase that renders the fat and cooks the meat through, followed by a high-temperature phase that crisps the skin.

To begin, preheat your oven to 300°F (150°C). Place your pork belly skin-side up on a baking sheet or in a roasting pan. If there's excess fat on the underside or edges, you can trim some of it away, but leave the layer of fat that sits between the skin and meat intact. Rub the skin with salt and a tiny amount of oil. Place the pork belly in the oven and roast for approximately 2.5 to 3 hours, depending on the thickness of your piece. A general guideline is about 45 minutes per pound at this temperature.

During this long, low roasting phase, the pork belly's internal fat will begin rendering (melting) into the meat, making it incredibly tender. The moisture in the meat will cook out slowly, creating an environment where the meat stays moist while the connective tissues break down. Check the internal temperature periodically with a meat thermometer—you're aiming for an internal temperature of 190°F to 200°F (88°C to 93°C) in the thickest part of the meat. This higher temperature is actually desirable for pork belly because it allows maximum fat rendering.

Once the meat reaches temperature and is very tender when poked with a fork, increase the oven temperature to 475°F (245°C) and roast for an additional 10 to 15 minutes. Watch it carefully during this phase because the skin can burn if left too long. The goal is to achieve a golden, blistered, crackling skin. Some liquid may accumulate in the pan—this is normal and comes from fat rendering out. You can remove the pork belly from the pan and keep it in a warm place while you prepare a pan sauce from these drippings.

Let the roasted pork belly rest for 5 to 10 minutes before cutting. This allows the juices to redistribute throughout the meat. When you cut into it, you should see layers of meat and fat, with the skin separating easily from the fat layer beneath it. The skin should be crispy enough to crack with a knife.

Practical Takeaway: Roast at 300°F for 2.5-3 hours until internal temperature reaches 190-200°F, then blast at 475°F for 10-15 minutes for crispy skin. Rest before serving. The two-temperature method is essential for both tender meat and crackling skin.

Braising Pork Belly for Tender Comfort Food

Braising is a cooking method where meat is seared, then cooked slowly in a covered pot with liquid. This technique works beautifully for pork belly and is common in Chinese, Vietnamese, and European cooking traditions. Braised pork belly has a completely different character than roasted pork belly—the meat becomes silky and fork-tender, and the surrounding braising liquid absorbs rich pork flavors and becomes a delicious sauce.

Start by patting your pork belly dry and cutting it into 2-inch cubes (for a pork belly that's about 3 pounds, you'll get roughly 8-12 pieces). Heat 2 tablespoons of oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat. Once the oil is hot, working in batches to avoid overcrowding, sear the pork belly pieces on all sides until they develop a deep brown crust. This browning creates flavor through a process called the Maillard reaction. This step should take about 2 to 3 minutes per side for each batch.

Remove the seared pork belly and set aside. In the same
