Learn How to Make Pancakes From Scratch

Understanding the Basic Ingredients You'll Need

Making pancakes from scratch requires just a handful of common ingredients that you likely already have in your kitchen. The foundation of any pancake recipe includes all-purpose flour, which provides structure to the batter. Most standard pancake recipes call for about one to two cups of flour per batch, depending on how many pancakes you want to make. All-purpose flour works best because it has a moderate protein content—around 10 to 12 percent—which creates pancakes with the right texture: fluffy on the inside with a slight structure that keeps them from falling apart.

Beyond flour, you'll need a leavening agent to make your pancakes rise. Baking powder is the most common choice, typically requiring one to two teaspoons per batch. Baking powder contains baking soda along with an acid, so it works immediately when mixed with wet ingredients and again when heated. Some recipes also include a small pinch of baking soda for extra lift, particularly if your recipe includes acidic ingredients like buttermilk or lemon juice. This two-stage leavening process creates those characteristic fluffy layers pancakes are known for.

Your wet ingredients are equally important. Most pancake batches require one to two cups of milk, whether that's regular dairy milk, buttermilk, or plant-based alternatives like almond or oat milk. Eggs bind everything together and add richness—typically one to three eggs per batch. Butter adds flavor and helps achieve a golden-brown exterior; you'll usually need two to four tablespoons melted. Salt enhances all the flavors, and a small amount of sugar adds subtle sweetness. Some recipes skip added sugar entirely, leaving the choice to customize with toppings.

For specialty pancakes, you might add vanilla extract (half to one teaspoon), which deepens the flavor without adding sweetness. Understanding these basic components helps you recognize quality pancake recipes and make substitutions when needed. For instance, if you don't have buttermilk, you can create a substitute by adding one tablespoon of lemon juice or vinegar to regular milk and letting it sit for five minutes. This acidic reaction mimics buttermilk's effect on the batter.

Practical Takeaway: Before you start mixing, gather all your ingredients and measure them out. This preparation method, called mise en place, prevents you from discovering mid-mix that you're out of baking powder and helps ensure consistent results every time you cook.

Preparing and Mixing Your Pancake Batter

The mixing process for pancake batter differs significantly from cake batter, and understanding this difference determines your pancakes' final texture. Begin by combining your dry ingredients in one bowl: flour, baking powder, salt, and sugar if using it. Mix these together with a whisk or fork for about 30 seconds to distribute the leavening agent evenly throughout the flour. This step matters because uneven distribution of baking powder leads to pancakes with inconsistent rise and texture.

In a separate bowl, whisk together your wet ingredients: milk, eggs, melted butter, and vanilla extract if using it. Mix these thoroughly until the eggs are fully incorporated and the mixture appears uniform. This step takes about a minute of whisking. Some recipes suggest letting the wet ingredients sit for a minute or two before combining with the dry mixture; this allows the flour to fully absorb the liquid, resulting in a more cohesive batter.

The critical step comes when combining wet and dry ingredients. This is where many home cooks accidentally create tough pancakes by overmixing. Pour your wet ingredients into the dry ingredients and stir just until combined—the batter should look somewhat lumpy with visible streaks of flour still showing. This typically requires only 10 to 20 gentle stirring motions with a spatula or wooden spoon. The science behind this: overmixing develops gluten, the protein network in flour that creates toughness in baked goods. Pancakes should be tender, not dense.

A common mistake is waiting too long after mixing before cooking. Pancake batter should rest for only about five to ten minutes after mixing. During this rest period, the baking powder begins activating, creating tiny air bubbles that make your pancakes light and fluffy. If you wait longer than 15 minutes, you'll lose some of that leavening power, and your pancakes may come out flatter than desired. The batter itself should pour easily but hold its shape slightly on the griddle—think of the consistency of thick soup rather than cake batter.

Practical Takeaway: Keep your dry and wet ingredients in separate bowls until the last moment, and when you combine them, use a gentle hand with only a few stirring motions. Lumpy batter creates better pancakes than smooth batter.

Cooking Pancakes on a Griddle or Pan

The cooking surface and temperature control represent the most important factors in producing evenly cooked pancakes with golden-brown exteriors and fluffy interiors. A griddle—a flat cooking surface larger than a traditional skillet—provides the best results because it distributes heat more evenly and allows you to cook multiple pancakes simultaneously. However, a large skillet or frying pan works perfectly well if a griddle isn't available. The key is selecting a surface with good heat retention; cast iron, griddles made from aluminum with a non-stick coating, or commercial-grade steel pans all work effectively.

Temperature control is crucial. Most pancake cooking occurs at medium to medium-high heat, though the exact setting varies depending on your stovetop and cookware. A helpful indicator involves the water droplet test: sprinkle a few drops of water on the heated surface. If they bead up and roll around, the temperature is right. If they immediately evaporate with a loud sizzle, your surface is too hot. If they sit and slowly evaporate, the temperature is too low. The ideal temperature for pancake cooking is around 375 degrees Fahrenheit if you're using an electric griddle with temperature controls.

Before pouring any batter, lightly grease your cooking surface with butter, oil, or cooking spray. This prevents sticking and helps create that desirable golden-brown crust. However, avoid excessive greasing—too much oil causes pancakes to brown too quickly on the outside while remaining undercooked inside, or creates an oily texture. A light coating is all you need, and you may only need to re-grease every few batches depending on your surface.

Pour batter onto the griddle using a quarter-cup measuring cup or a ladle, spacing pancakes about an inch apart. You'll notice the batter immediately beginning to spread and slightly puff up. Watch for bubbles forming across the surface of the pancake—this usually occurs within two to three minutes. Once bubbles appear and some burst to show slightly dry surfaces, it's time to flip. Flip only once, using a wide, flat spatula to ensure you can get underneath the entire pancake. The second side cooks more quickly, usually one to two minutes, until it reaches a light golden-brown color.

Practical Takeaway: Use the bubble test as your guide for when to flip—wait until bubbles form across the surface and some edges appear dry. Resist the urge to flip multiple times, which deflates those air pockets and creates denser pancakes.

Achieving Consistent Results Through Testing and Adjustment

Your first pancake of the day often serves as a test run rather than a keeper. As your griddle reaches its target temperature and the batter settles, this initial pancake helps you determine whether adjustments are needed. Professional pancake cooks and experienced home cooks consistently discard or set aside that first pancake because conditions are still stabilizing. If your first pancake spreads too thin and browns too quickly, your heat is too high—reduce the temperature slightly and wait a minute before trying again. If it spreads slowly and remains pale after cooking, increase the heat.

Batter consistency also affects your results and may need adjustment based on how your pancakes cook. If pancakes spread excessively thin and merge together, your batter is too thin; add a tablespoon or two of flour and stir gently to thicken it. If your batter sits in thick, stubborn portions that don't spread to form typical pancake shapes, add a tablespoon of milk to thin it slightly. This batter adjustment is normal and expected—different flour brands, humidity levels, and even egg sizes affect liquid absorption, so recipes serve as starting points rather than absolute formulas.
