Learn How to Make Homemade Tomato Paste Guide

Understanding Tomato Paste and Why Making It at Home Makes Sense

Tomato paste is a concentrated form of tomatoes that have been cooked down for several hours, strained to remove seeds and skins, and reduced to a thick, rich product. This guide provides information about the process of making tomato paste in your own kitchen. Store-bought tomato paste typically costs between $1.50 to $4.00 per small can, depending on the brand and quality. When you make tomato paste at home, you can produce a similar product for approximately $0.50 to $1.00 per cup, depending on your tomato source and energy costs. This represents significant savings if you use tomato paste regularly in cooking.

Many home cooks discover that homemade tomato paste tastes noticeably different from commercial versions. The flavor tends to be fresher and more complex because you control the tomato variety, ripeness level, and cooking duration. Commercial paste often includes additives like citric acid, salt, or preservatives to extend shelf life. When making paste at home, you decide exactly what goes into your finished product.

The basic principle behind tomato paste production is straightforward: tomatoes contain approximately 95 percent water. By heating tomatoes slowly and stirring frequently, you evaporate water and concentrate the natural flavors and nutrients. A kilogram of fresh tomatoes typically yields about 100 to 150 milliliters of finished paste, depending on the tomato variety and water content.

Practical takeaway: Before committing to making tomato paste, calculate your potential savings based on your local tomato prices and usage frequency. Consider whether you have adequate time for the cooking process, as the production method requires several hours of simmering time.

Selecting the Right Tomatoes for Your Paste

The quality of your finished tomato paste depends almost entirely on the tomatoes you select. Not all tomato varieties work equally well for paste production. The best choices are paste tomatoes, also called processing tomatoes or plum tomatoes. These varieties include San Marzano, Roma, and Amish paste tomatoes. These types contain less water, fewer seeds, and thicker flesh compared to slicing tomatoes like beefsteaks or heirlooms.

San Marzano tomatoes are particularly prized for paste production because they have a dry flesh structure and fewer seeds. If you grow your own tomatoes, dedicating some space to paste varieties can improve your results. A typical paste tomato plant produces 20 to 40 pounds of fruit per season, which converts to several quarts of finished paste.

Timing matters significantly when selecting tomatoes. The best tomatoes for paste are fully ripe, deep red in color, and slightly soft when gently squeezed. Tomatoes picked at peak ripeness contain higher levels of sugars and lycopene, the compound responsible for the red color and associated health properties. Avoid tomatoes with cracks, bruises, or soft spots that indicate decay. Even one moldy tomato can affect the flavor of an entire batch of paste.

If you don't grow tomatoes, purchase them from farmers markets, farm stands, or local orchards during peak season, typically August through September in most regions. Bulk purchases often cost less than grocery store tomatoes. Plan to make paste when tomatoes are least expensive and most abundant. During these times, prices can drop to $1.00 to $2.00 per pound compared to $4.00 to $6.00 per pound during off-season months.

Practical takeaway: Calculate the quantity of tomatoes you need based on your desired finished paste volume. As a general guideline, plan on 5 to 6 pounds of fresh tomatoes to produce 1 cup of finished paste. Purchase or harvest your tomatoes when they are at peak ripeness and abundance.

Essential Equipment and Preparation Methods

Making tomato paste does not require specialized or expensive equipment. Most home cooks already own the necessary items. A large, heavy-bottomed pot with a capacity of at least 8 quarts works well for cooking batches of tomatoes. Stainless steel pots are preferable to aluminum because acidic tomatoes can react with aluminum over extended cooking times. A wooden spoon or heat-resistant spatula is needed for stirring. A food mill or strainer separates seeds and skins from the tomato solids. Many home cooks use a hand-crank food mill, which typically costs $30 to $60 and serves multiple culinary purposes beyond paste production.

Before cooking, wash your tomatoes thoroughly under running water and remove any remaining stems. Some cooks prefer to blanch tomatoes briefly in boiling water for 30 to 60 seconds, then plunge them into ice water. This step makes the skins easier to remove. After blanching, tomato skins slip off with minimal effort. This pre-processing step is optional but produces a smoother finished paste with fewer visible skin fragments.

Chop the tomatoes into quarters or eighths, depending on their size. Leaving tomatoes in larger pieces initially, rather than using a blender or food processor, allows you to monitor their breakdown and prevents creating excessive foam during cooking. Place the chopped tomatoes directly into your large pot without adding water. Tomatoes release their own liquid as they heat, providing sufficient moisture for cooking.

Additional useful items include a large colander or strainer, a baking sheet with raised sides for oven-finishing the paste, parchment paper, glass jars for storage, and clean kitchen towels. If you plan to can your paste using water bath canning methods, you will also need canning jars, lids, and a canning pot with a rack. Canning equipment is optional for home use, as frozen or refrigerated paste works well for most purposes.

Practical takeaway: Before beginning your project, gather all necessary equipment and verify it is clean and ready to use. Organize your workspace to keep raw tomatoes, cooking equipment, and storage containers separate to prevent cross-contamination.

The Cooking Process: From Fresh Tomatoes to Concentrated Paste

The cooking process typically requires between 4 to 8 hours, depending on the quantity of tomatoes, the heat level, and your desired consistency. Place your chopped tomatoes in your large pot over medium-high heat. As the tomatoes warm, they will release their liquid and begin to break down. Stir occasionally to prevent sticking and ensure even heating. The mixture should reach a gentle simmer within 15 to 20 minutes.

Once simmering begins, run your tomato mixture through a food mill or fine strainer to remove seeds and skins. This step is called the "first pass" and separates the pulp from solid debris. Pour the strained mixture back into your clean pot. The resulting liquid is thinner than your desired finished paste but contains all the flavor and nutrition of your original tomatoes.

Return the strained mixture to medium heat and maintain a gentle simmer. Avoid high heat, which can cause scorching and create a burnt flavor. Stir the mixture every 20 to 30 minutes, paying particular attention to the bottom where paste can stick. As water evaporates, the paste will gradually thicken and darken in color. The transformation from watery liquid to thick paste occurs gradually over several hours. Most cooks report that the color deepens from bright red to a rich, dark rust red as cooking progresses.

A common alternative method involves finishing the paste in an oven. After the stovetop cooking reduces the volume by approximately half, transfer the paste to a wide baking sheet lined with parchment paper and place it in an oven set to 250 to 300 degrees Fahrenheit. Leave the oven door slightly ajar to allow steam to escape. This method produces more even heating and prevents scorching. Oven cooking typically requires 2 to 4 additional hours, depending on the starting volume and desired thickness. Stir the paste every 30 to 45 minutes.

Your paste reaches the desired consistency when a spoon drawn through it leaves a trail that closes slowly. At this point, it should coat the back of a spoon heavily. Some cooks prefer thicker paste that is almost spreadable, while others prefer a consistency that still pours slowly. Testing your paste by cooling a small amount on a plate helps you decide when the consistency matches your preference.

Practical takeaway: Set aside a full day or evening for paste production. Budget approximately 6 to 8 hours of active and monitoring time
