Learn How to Make Homemade Chicken Strips

Understanding Chicken Strips and Why You Might Make Them at Home

Homemade chicken strips offer a practical alternative to store-bought versions. Commercial chicken strips often contain added preservatives, sodium, and fillers that increase production costs and shelf life. According to the USDA, a typical frozen chicken strip from a major brand contains between 300-450 mg of sodium per serving, while homemade versions can be prepared with significantly less salt. When you prepare chicken strips in your own kitchen, you control every ingredient that goes into the final product.

The basic concept of chicken strips involves taking boneless, skinless chicken breasts and cutting them into elongated pieces, then coating them with breading and cooking them through frying, baking, or air frying. This preparation method appeals to many households because it creates a familiar texture and appearance that family members enjoy, particularly children. The strips cook relatively quickly—typically between 12 to 18 minutes depending on thickness and cooking method—making them suitable for weeknight dinners.

Cost comparisons show that homemade chicken strips generally cost between $3 to $5 per pound for quality chicken breasts, while pre-made frozen strips typically range from $6 to $10 per pound. This price difference becomes significant for families who consume chicken strips regularly. Beyond cost savings, making chicken strips at home allows you to accommodate dietary preferences, including gluten-free breading, lower-sodium options, and use of specific cooking oils that align with your nutritional goals.

Practical takeaway: Calculate your family's chicken consumption over a month. If your household eats chicken strips twice weekly, homemade preparation could save $40-80 monthly while providing control over ingredients and nutrition content.

Selecting and Preparing Quality Chicken Breast

The foundation of quality homemade chicken strips begins with selecting appropriate chicken breasts. Fresh chicken breasts should have a pinkish color with no gray or brown spots. The meat should feel firm to the touch and should not have an unpleasant odor. When purchasing, check the package date and ensure the chicken will be used within 1-2 days if refrigerated, or within 3-4 months if frozen. USDA guidelines recommend maintaining chicken at 40°F or below in your refrigerator to prevent bacterial growth.

Before cutting chicken breasts into strips, you'll want to prepare them properly. First, remove the chicken from its packaging and place it on a clean cutting board reserved for raw meat. Pat the chicken dry using paper towels—this step is important because moisture on the surface can interfere with breading adhesion. If you're working with particularly thick breasts (over one inch), consider using the butterflying technique: place your hand flat on top of the breast and carefully slice horizontally through the middle, creating two thinner pieces. This approach ensures more even cooking throughout the strip.

When cutting the chicken into strips, use a sharp knife and cut against the grain of the muscle fibers. This technique produces strips that will be more tender when cooked. Standard strip width ranges from three-quarters inch to one inch wide. Consistency in sizing matters because uniform strips cook at the same rate, preventing some pieces from being undercooked while others become dry. As you cut, place finished strips on a clean plate separate from the raw chicken packaging to prevent cross-contamination.

Some home cooks prefer to pound chicken breasts to an even thickness before cutting into strips. Using a meat mallet with the flat side, gently tap the chicken until it reaches approximately half-inch thickness. This approach, while adding a step, can further promote even cooking and may result in slightly more tender finished strips.

Practical takeaway: Invest in a cutting board designated exclusively for raw poultry and clean it with hot soapy water immediately after use. Keep separate utensils for raw and cooked chicken to maintain food safety standards in your kitchen.

Creating Effective Breading Mixtures and Coatings

The breading mixture is what transforms plain chicken strips into a finished product with appealing texture and flavor. A basic breading typically consists of three components: a flour base, a binder (usually egg), and a dry coating layer. Understanding how these components work together helps you create coatings that adhere properly and cook evenly. The flour base should be between one-half to three-quarters cup for approximately one pound of chicken strips. All-purpose flour works well, but you can also use cornstarch mixed with flour (a 1:1 ratio) for a crispier texture, or panko breadcrumbs for larger crunch.

The binder is typically one to two beaten eggs mixed with one tablespoon of water or milk. Some cooks add one tablespoon of cornstarch to the egg mixture, which creates a thicker coating that adheres better to the chicken. The binder's purpose is to create a sticky surface that allows the dry coating to stick to the meat rather than falling off during cooking. When you dip chicken strips into the egg mixture, ensure they're fully coated but allow excess to drip off for about three seconds—excess egg will create thick, soggy patches rather than a crispy coating.

Flavor variations for breading mixtures are extensive. For a basic seasoned coating, mix one teaspoon salt, one-half teaspoon black pepper, one-half teaspoon garlic powder, and one-half teaspoon paprika into your dry coating. Other popular combinations include Italian seasoning (dried oregano, basil, and thyme), Cajun spices (cayenne, paprika, and garlic powder), or ranch flavoring (dill, parsley, garlic, and onion powder). When adding seasonings to breadcrumbs or flour, mix thoroughly so distribution is even throughout the coating—this prevents some strips from being under-seasoned or over-seasoned.

For gluten-free options, substitute all-purpose flour with rice flour, cornstarch, or dedicated gluten-free flour blends. These alternatives produce slightly different textures—rice flour creates a crisper coating, while gluten-free blends often include xanthan gum which helps bind the mixture. Panko breadcrumbs now come in gluten-free versions made from rice or corn, providing the same crunch as traditional panko.

The breading process itself follows a simple assembly line: place your flour mixture in one shallow bowl, beaten egg in another, and breadcrumb mixture in a third. Working with one chicken strip at a time, first coat it thoroughly in the flour mixture, shaking off excess. Then dip it into the egg mixture, coating completely. Finally, roll it in the breadcrumb mixture, pressing gently so the crumbs adhere to the moist egg coating. Place the breaded strip on a clean plate and repeat with remaining strips.

Practical takeaway: Prepare your breading station before you begin working with chicken. Having all components ready prevents raw chicken from sitting uncovered for extended periods, which can allow bacteria to multiply. This setup also makes the breading process faster and more efficient.

Cooking Methods: Baking, Frying, and Air Frying

Baking is a popular method for preparing homemade chicken strips because it requires minimal oil and produces consistent results. Preheat your oven to 400°F and lightly coat a baking sheet with cooking spray or a thin layer of oil. Place breaded chicken strips on the sheet in a single layer without overlapping. Bake for 12 to 15 minutes, depending on strip thickness and your oven's specific temperature variations. Strips are done when the internal temperature reaches 165°F when measured with a meat thermometer inserted into the thickest part of a strip. The coating should be golden brown and crispy. Baking typically uses minimal oil, making it a lower-calorie option—a baked chicken strip contains approximately 150-180 calories compared to 200-250 calories for a fried version.

Traditional pan frying produces strips with a distinct crispy exterior. Heat one-quarter to one-half inch of oil (vegetable, canola, or peanut oil work well) in a skillet to 350°F. You can test the oil temperature by dropping a small piece of bread into it—it should brown in approximately 60 seconds at the correct temperature. Carefully place breaded strips into the hot oil, working in batches to avoid overcrowding the pan. Fry for 3 to 4 minutes per side until the coating is golden brown and the chicken reaches 165°F internal temperature. Remove cooked strips using
