Learn How to Make Apple Chips at Home

Understanding Apple Chips and Why Make Them at Home

Apple chips are thin, crispy slices of dried apple that make a nutritious snack. Unlike commercially produced chips that often contain added sugars, preservatives, and oils, homemade apple chips let you control exactly what goes into your food. According to the USDA, a medium apple contains about 95 calories and 4 grams of fiber, along with vitamin C and potassium. When you dehydrate apples into chips, you concentrate these nutrients into a smaller package, making them a satisfying snack that can help curb hunger between meals.

The process of making apple chips removes water from the fruit through heat, which prevents spoilage naturally. This dehydration method has been used for centuries across many cultures as a way to preserve seasonal fruits for use year-round. Home production costs significantly less than buying pre-packaged apple chips from stores, where prices often range from $8 to $15 per pound. Making your own chips at home typically costs $1 to $3 per pound, depending on the type of apples you purchase and your energy costs.

Many people make apple chips to reduce food waste. According to the EPA, Americans throw away about 30-40% of the food supply. If you have apples that are approaching their peak ripeness or have minor blemishes, converting them to chips prevents waste while creating a shelf-stable product that lasts several weeks when stored properly. Homemade apple chips also work well for people with dietary restrictions—you can make unsweetened versions, cinnamon-spiced versions, or variations for specific nutritional needs.

Practical Takeaway: Determine your motivation for making apple chips. Are you looking to reduce costs, control ingredients, use excess fruit, or create a specific flavor? Your answer will influence which apples you choose and which preparation method works best for your situation.

Selecting and Preparing Your Apples

The type of apple you choose affects the final product's taste, texture, and color. Tart apples like Granny Smith, Pink Lady, and Honeycrisp create chips with more complex flavor and better structural integrity. Sweet apples like Gala and Fuji produce sweeter chips but may brown more easily. Medium-tart varieties such as Braeburn offer a balanced option. Avoid using very soft or mealy apples, as they won't slice cleanly or dehydrate as well. Most varieties work, but choosing firm apples gives better results.

Wash your apples thoroughly under running water, using a soft brush or cloth to remove dirt and any residual pesticides. If you prefer, you can peel the apples, though leaving the skin on provides additional fiber and nutrients. The skin also helps hold the chip together during dehydration. Some people blanch their apples before slicing—briefly dipping them in boiling water then ice water—to help prevent browning, though this step is optional.

Slice your apples into uniform pieces, ideally between 1/8 inch and 1/4 inch thick. Consistent thickness is crucial because thinner slices dry faster while thicker slices may not dry completely. Use a sharp knife or a mandoline slicer to achieve even cuts. A mandoline slicer creates very uniform slices quickly, though it requires careful handling to avoid injury. After slicing, work reasonably quickly, as cut apples will begin to brown due to oxidation. You can slow this process by tossing slices in lemon juice or a mixture of water and vitamin C powder.

For a sweeter product, toss your apple slices in a light coating of cinnamon and sugar before dehydrating. Use about 1 tablespoon of cinnamon and 2-3 tablespoons of sugar per medium apple. For an unsweetened version, you can skip seasoning entirely or add just cinnamon. Some people use honey or maple syrup, though these add moisture and extend drying time slightly. Arrange your prepared slices on dehydrator trays or baking sheets in a single layer without overlapping.

Practical Takeaway: Invest in a sharp knife or inexpensive mandoline slicer to create uniform slices. Consistent thickness makes a larger difference in success than any other preparation step, since evenly sized pieces dry at the same rate and produce uniform results.

Dehydrating Apple Chips Using an Oven

If you don't have a food dehydrator, your regular kitchen oven works well for making apple chips. Preheat your oven to its lowest setting, typically 170°F to 200°F. Most ovens cannot maintain temperatures lower than this, which is important because higher heat can cook the apples rather than dehydrate them. If your oven has a convection setting, use it—the air circulation helps remove moisture more evenly.

Arrange your apple slices on baking sheets lined with parchment paper. You can fit multiple trays in the oven at once. Leave the oven door slightly ajar by placing a wooden spoon or oven prop in the opening. This allows moisture to escape rather than recirculate inside the oven. Prop the door open about 2-4 inches. Dehydrating in an oven typically takes 2-3 hours, though timing varies based on slice thickness, moisture content, and your specific oven's temperature accuracy.

Check your apples every 30 minutes after the first hour. They should gradually become drier and lighter. The chips are done when they bend slightly without breaking completely, or when they break cleanly with a snap, depending on your texture preference. Some people prefer slightly chewy chips while others want them completely crispy. If you like some chewiness, stop drying when the chips are still slightly flexible. For completely crispy chips, continue until they snap easily.

One consideration with oven-drying is that your oven will use more energy than a dedicated dehydrator, increasing utility costs. However, this method works without additional equipment purchases. To reduce energy use, you can make apple chips during cooler months when you won't be heating your kitchen as much, or when you're already using the oven for other tasks. Turning off the oven and leaving chips inside to cool with residual heat for 10-15 minutes after turning it off can help finish the drying process gently.

Practical Takeaway: Keep the oven door propped open slightly and check your apples at regular intervals. These two practices ensure even dehydration and let you catch chips at your preferred texture rather than overdrying them.

Using a Food Dehydrator for Best Results

A dedicated food dehydrator offers more precise control over temperature and drying time compared to an oven. Dehydrators come in two main types: stackable tray models and shelf-based models. Stackable models are more affordable and compact, typically ranging from $40 to $100. Shelf-based models cost more but hold more trays and distribute heat more evenly. Both types work well for making apple chips. Most dehydrators have temperature settings from 95°F to 165°F, with apple chips drying best at 130°F to 160°F.

Arrange apple slices on dehydrator trays in a single layer without overlapping. Dehydrators work by moving heated air across the trays, so allowing air space between pieces helps them dry evenly. If your dehydrator has multiple trays, you may need to rotate them during the drying process, moving trays from top to bottom and vice versa every hour or so. Check your specific dehydrator's manual, as some models circulate air more evenly than others.

At 140°F, apple chips typically take 6-8 hours to dehydrate fully. At higher temperatures, they may dry in 4-5 hours but risk becoming overly crispy or even burnt on the edges. Lower temperatures preserve more nutrients but take longer. For most home cooks, 140°F offers a good balance between speed and quality. Keep the dehydrator running continuously rather than turning it on and off, as consistent heat provides better results than interrupted drying.

A significant advantage of dehydrators is their efficiency. They use less energy than ovens because they're smaller and insulated specifically for this task. If you make apple chips regularly—say, once or twice monthly—a dehydrator pays for itself within a year through energy savings and reduced purchase costs compared to buying commercial chips. Dehydrators also allow you to process
