How to Make Smash Burgers at Home

Understanding What Smash Burgers Are and Why They Work

Smash burgers represent a cooking technique that differs significantly from traditional burger methods. Rather than forming a thick patty before cooking, smash burger preparation involves starting with a loose ball of ground beef and flattening it aggressively onto a hot cooking surface. This approach creates a burger with a thin profile, typically between one-quarter and one-third inch thick, compared to the standard half-inch to three-quarter inch thickness of conventional burgers.

The smash burger technique gained popularity in American diners during the early 20th century, particularly in the Northeast and Midwest regions. The method became widespread because it solved practical problems: it cooked quickly, reduced the need for skilled labor, and produced consistent results across many orders. Home cooks have adopted this technique in recent years because the results rival or exceed restaurant-quality burgers made through other methods.

The physics behind smash burgers explains their superior texture and flavor. When you smash ground beef onto a hot surface, the meat makes direct contact with the cooking surface across a much larger area than a thicker patty would. This creates something called the Maillard reaction—a chemical process where amino acids and sugars combine under high heat to create complex flavors and a browned, flavorful crust. A thicker burger's interior often remains relatively cool while the exterior browns, but a smash burger browns thoroughly because of its thin profile.

Additionally, the aggressive flattening breaks down the structure of the meat differently than hand-forming a patty. Many traditional burger recipes emphasize handling the meat minimally to avoid developing gluten in any binders and to keep the meat tender. Smash burgers work differently—the flattening actually enhances texture by creating a denser, more compact exterior layer that contrasts with a still-tender interior. The burger retains more of its natural juices because the cooking time is so brief.

Practical takeaway: Smash burgers produce a superior crust and flavor through intense, direct heat contact with thin meat. Understanding this technique's advantages will help you execute each step with purpose rather than simply following instructions.

Selecting and Preparing Ground Beef for Optimal Results

The quality and type of ground beef you select directly impacts your smash burger's final texture and taste. Ground beef comes in several varieties based on fat content: 80/20 (80 percent lean, 20 percent fat), 85/15, 90/10, and even leaner options. For smash burgers, the 80/20 blend offers the best balance. The 20 percent fat content provides enough moisture and flavor to create a juicy burger while still allowing proper browning and crust formation. Leaner blends like 90/10 produce drier burgers that lack richness, while fattier options like 73/27 can become greasy and may splatter excessively during cooking.

Purchase ground beef from a quality source and use it within one to two days of purchase for best results. If you cannot cook immediately, freeze the beef in an airtight container or vacuum-sealed bag. Frozen ground beef will maintain quality for up to three months. When you need to thaw it, move it from the freezer to the refrigerator several hours before cooking rather than thawing at room temperature, which increases bacterial growth risk.

Some home cooks prefer grinding their own beef to control fat content and meat quality precisely. If you choose this route, purchase chuck roast (a cut naturally containing about 20 percent fat) and grind it using a food processor or meat grinder. Chill both the meat and the grinding equipment in the freezer for 30 minutes before grinding to keep the meat cold and achieve the proper texture. Freshly ground beef produces noticeably superior results compared to pre-ground options because it has not oxidized and remains fresher.

Portion your ground beef into two-ounce balls (approximately the size of a golf ball) before cooking begins. This pre-portioning serves several purposes: it ensures consistency across multiple burgers, it keeps your hands from touching the meat excessively during the smashing process, and it speeds up cooking production if you are making multiple burgers. Leave the portions at room temperature for about 10 minutes before cooking. Cold meat will not smash as effectively and will not cook as evenly.

Practical takeaway: Use 80/20 ground beef, keep it fresh and cold until cooking time, then portion into two-ounce balls and bring to room temperature just before cooking. This approach maximizes flavor development and ensures consistent results.

Equipment and Setup for Smash Burger Success

Creating the proper cooking environment is essential for smash burger preparation. The cooking surface must reach and maintain high temperatures—ideally between 350 and 400 degrees Fahrenheit. A cast iron skillet works exceptionally well because it retains heat effectively and develops seasoning over time that enhances flavor. A heavy-bottomed stainless steel skillet or carbon steel pan also works. Non-stick pans should generally be avoided because they cannot reach the necessary temperatures without degrading and do not produce the same quality crust.

If you do not have appropriate stovetop cookware, an outdoor flat-top griddle designed for cooking offers excellent results. Many people find griddle cooking superior because the flat surface provides even heat distribution and allows you to cook multiple burgers simultaneously. Griddles can be powered by propane, charcoal, or electricity depending on the model. A standard two-burner propane griddle costs between $100 and $300 and will serve you well for years of burger-making.

Beyond the cooking surface itself, you will need a spatula specifically designed for smashing. Standard spatulas often lack the necessary surface area and weight. A fish spatula (a thin, angled metal spatula) or a dedicated burger spatula provides the optimal tool for this job. The spatula should have a flat bottom with no gaps and should be wide enough to cover most of the burger patty. Some people use the bottom of a second skillet or a purpose-built smash tool, but a quality spatula offers better control.

Additional equipment includes a meat thermometer for checking internal temperatures (165 degrees Fahrenheit indicates doneness), parchment paper or butcher paper for wrapping cooked burgers (optional but helpful for maintaining heat), and a timer to track cooking durations. Many cooks find that parchment paper placed between the meat ball and the cooking surface helps with the initial smashing action, though experienced cooks often skip this step. Have all your toppings, buns, and condiments prepared and organized before you start cooking, as smash burgers cook so quickly that you will not have time to assemble components mid-preparation.

Practical takeaway: Invest in proper equipment—a heavy-bottomed skillet or griddle, a quality spatula, and a meat thermometer. Good equipment makes the technique easier and produces better results than attempting to improvise with inadequate tools.

The Cooking Technique: From Smash to Completion

Begin by preheating your cooking surface until it is very hot. If using a skillet on the stovetop, medium-high to high heat typically requires 3 to 5 minutes of preheating. You can test readiness by sprinkling a small amount of water on the surface—if it sizzles violently and evaporates almost immediately, the surface is ready. If using an outdoor griddle, follow the manufacturer's instructions for preheating, which typically involves heating for 10 to 15 minutes.

Season your two-ounce meat balls generously with salt and pepper just before cooking. Do not season the meat before portioning, as salt can cause the meat structure to break down prematurely. Place the unseasonably formed ball directly onto the hot cooking surface. Immediately position your spatula on top of the meat ball and press down firmly and steadily for 10 to 15 seconds. Apply significant pressure—you should be pressing with enough force that you feel resistance. This aggressive pressure breaks apart the meat structure and forces it into contact with the hot surface.

After the initial smash, lift your spatula to check the progress. The meat should have flattened into a thin patty with a brown crust forming on the bottom. At this point, you can optionally add a slice of cheese directly onto the hot meat if desired. Cheese will melt from the residual heat. Cook the burger for approximately 1 to 2 minutes on the first side. During this time, resist the
