How to Make Apple Cider Vinegar at Home

Understanding Apple Cider Vinegar and Its Basic Composition

Apple cider vinegar (ACV) is a fermented liquid made from apples, water, and time. The fermentation process transforms apple juice into vinegar through the work of bacteria and yeast. Understanding what happens during fermentation helps you recognize when your batch is progressing correctly.

The fermentation occurs in two main stages. First, yeast converts the sugars in apple juice into alcohol, creating what's known as hard cider. Second, acetic acid bacteria (primarily Acetobacter aceti) convert that alcohol into acetic acid, which gives vinegar its sour taste and pungent smell. This two-step process typically takes between 4 to 6 months when making vinegar at home, though some batches may take longer.

Commercial apple cider vinegar contains about 4-8% acetic acid by volume. The "mother" — a brownish, cloudy substance that forms during fermentation — contains beneficial bacteria and enzymes. Many people preserve the mother when making subsequent batches because it speeds up fermentation and improves the final product's quality.

Apple cider vinegar made at home differs from store-bought versions in several ways. Homemade vinegar may have a stronger, more complex flavor profile because you control the apple varieties and fermentation duration. Store-bought versions are often pasteurized and filtered, which removes the mother and extends shelf life. Homemade versions remain alive with bacteria and may continue to slowly ferment over time.

Practical Takeaway: Learn about the two fermentation stages — alcohol production followed by acetic acid formation — so you can monitor your batch's progress and identify when fermentation is complete. The appearance of a mother during the process is a positive sign of active fermentation.

Gathering Ingredients and Equipment

Making apple cider vinegar requires surprisingly few materials. The primary ingredient is apples. Any variety works, though some people prefer sweeter apples like Gala or Fuji for better-tasting results, while others use tart varieties like Granny Smith. You can also use apple scraps — cores, peels, and stems — making this a sustainable way to use parts of apples you might otherwise discard. Many home vinegar makers collect scraps in the freezer until they have enough to start a batch.

Beyond apples, you'll need filtered or dechlorinated water. Chlorinated tap water can interfere with fermentation by killing the beneficial bacteria you're trying to cultivate. If your tap water is chlorinated, let it sit uncovered for 24 hours before using it, which allows chlorine to evaporate. You'll also need sugar — either white granulated sugar or brown sugar — to feed the yeast during the first fermentation stage. Typically, use about 1/4 cup of sugar per quart of liquid.

Equipment needs are minimal and likely already in your kitchen. You'll need a glass jar (quart-sized or larger), cheesecloth or a coffee filter, a rubber band, a wooden spoon or dowel for stirring, and a strainer. Glass is essential because metal and plastic can react with the acidic vinegar during fermentation. Avoid using metal lids on your jar during fermentation; they can corrode from the acidic environment. Instead, use cloth secured with a rubber band to allow air circulation while keeping out dust and insects.

Some people invest in additional equipment over time, such as a hydrometer to measure sugar content (specific gravity) and track fermentation progress, pH test strips to monitor acidity levels, or specialized fermentation jars with airlocks. However, none of these are necessary for successful home vinegar production.

Practical Takeaway: Gather a clean glass jar, cheesecloth, apples (fresh or scraps), sugar, and water before beginning. Avoid chlorinated water and metal equipment that contacts the fermenting vinegar. These basic supplies cost very little, making vinegar production an affordable project.

The First Fermentation Stage: Creating Hard Cider

The first fermentation stage transforms apple juice into alcoholic cider through yeast activity. Begin by preparing your apples. If using whole apples, wash them thoroughly and chop them into chunks roughly 1-2 inches in size. You don't need to peel or remove seeds. If using apple scraps, make sure they're clean and free from mold or damage. Combine your apples with water in your glass jar — use a ratio of about 1 pound of apples to 1 cup of water, though exact measurements are flexible.

Add sugar to your jar. The standard ratio is 1/4 cup of sugar per quart of liquid. Stir thoroughly until the sugar dissolves. This sugar feeds the wild yeast naturally present on apples and in your environment. You don't need to add commercial yeast; wild fermentation works well for home vinegar making. The mixture should smell fresh and slightly sweet at this stage.

Cover your jar with cheesecloth or a coffee filter secured with a rubber band. This covering allows oxygen to enter (which wild yeast needs during this stage) while preventing dust and insects from contaminating your batch. Place the jar in a warm location, ideally between 60-80 degrees Fahrenheit. A kitchen counter away from direct sunlight works well. Avoid placing it in a cold garage or basement where fermentation will proceed very slowly.

Over the next 1-2 weeks, you'll observe changes. Small bubbles may form at the surface. The mixture may develop a cloudy appearance. A thin layer of white or grayish foam (called a raft) might form on top. These are all normal signs of fermentation. Stir the mixture daily with a wooden spoon, pushing the apple solids down under the liquid. This contact with oxygen helps the fermentation process.

After about 2 weeks, when fermentation slows (fewer bubbles, reduced foam), strain out all the apple solids. Pour the liquid through a fine strainer or cheesecloth into a clean jar, discarding the solids. This liquid is your basic cider, now containing alcohol and ready for the second fermentation stage.

Practical Takeaway: During the first stage lasting 1-2 weeks, feed yeast with sugar, maintain warmth, allow air circulation through cloth covering, and stir daily. When bubbling slows, strain the solids and transfer only the liquid to proceed with vinegar creation.

The Second Fermentation Stage: Converting to Vinegar

The second fermentation stage transforms your alcoholic cider into vinegar through acetic acid bacteria. Pour your strained cider into a clean glass jar. If you have a mother from a previous batch of vinegar, add it now — it will significantly speed up fermentation. If you don't have a mother, don't worry; one will develop naturally during fermentation from bacteria in your environment and on the apple solids.

Cover the jar loosely with cheesecloth again. The bacteria that create vinegar (Acetobacter) need oxygen to thrive, so good air circulation remains essential throughout this stage. Place the jar in a warm location, ideally between 60-80 degrees Fahrenheit. Temperature consistency matters more than absolute warmth; a location with stable temperatures works better than one with large daily fluctuations.

During this stage, which typically lasts 4-6 months, several changes occur. A brown, gelatinous layer will form on the surface — this is the mother developing. It may look unattractive, but it's a good sign. Underneath, the liquid gradually becomes more acidic and develops vinegar's characteristic smell. At first, it may smell like alcohol; gradually, this transitions to a sharp vinegar aroma.

Resist the urge to disturb the batch frequently. Unlike the first fermentation stage, you should stir minimally during vinegar production. Excessive stirring can break up the developing mother and introduce unwanted bacteria. A gentle stir every few weeks is sufficient. Some people don't stir at all during this stage.

Taste small samples after about 4 months. If the vinegar has a pleasant sour taste with apple notes and no lingering sweetness, it's ready. If it still tastes mostly like cider with only slight sourness, wait another month or two. The longer you wait, the more acidic and strong-tasting your vinegar will become. Some people prefer milder vinegar that's ready after
