Understanding Whipped Coffee: What It Is and Why It's Popular

Whipped coffee, also known as Dalgona coffee, became a global trend starting in 2020. The drink gained popularity through social media platforms like TikTok and Instagram, with millions of people sharing videos of themselves making and enjoying this fluffy beverage. The name comes from a South Korean coffee drink that has been around for decades, but the recent surge in interest introduced it to audiences worldwide.

Whipped coffee is made by whipping together instant coffee, sugar, and hot water until the mixture becomes light, airy, and mousse-like. This whipped mixture is then spooned over hot or cold milk, creating a layered drink with a smooth taste and interesting texture. The drink typically contains about 1-2 tablespoons of instant coffee, 1-2 tablespoons of sugar, and 1-2 tablespoons of hot water, though these proportions can be adjusted based on personal preference.

The appeal of whipped coffee comes from several factors. First, it requires only basic ingredients that most people already have at home. Second, the process is visual and satisfying to watch, which explains its popularity on social media. Third, the resulting drink offers a different experience compared to traditional coffee preparations. The whipped layer provides a creamy, slightly sweet topping that sits above the milk base.

According to data from 2020-2021, searches for "whipped coffee" increased by over 9,000% during the peak of the trend. Numerous coffee shops and cafes began offering their own versions of the drink, sometimes with creative names and flavor variations. Home coffee enthusiasts have continued making whipped coffee regularly, even as the initial viral wave has passed.

Practical Takeaway: Whipped coffee is a simple, Instagram-worthy beverage made by whipping instant coffee with sugar and water, then serving it over milk. Understanding the basic concept helps you grasp why this drink became popular and how it differs from other coffee preparation methods.

Essential Ingredients and Equipment You'll Need

Making whipped coffee requires very few ingredients and pieces of equipment. Most people can gather everything needed from their kitchen without purchasing anything new. This accessibility is one reason the drink became so widespread during lockdown periods when people spent more time at home.

The three main ingredients for whipped coffee are instant coffee, granulated sugar, and hot water. Instant coffee works best because it dissolves quickly and creates a stable foam when whipped. Regular ground coffee does not work well for this recipe because the grounds will not incorporate smoothly into the whipped mixture. Some people use instant espresso powder as a substitute, which produces a stronger flavor. Brown sugar can replace white sugar if preferred, though it may affect the color slightly. Cold water can be used instead of hot water, though the whipping process takes longer.

For the base of the drink, you will need milk. Whole milk, 2% milk, skim milk, and non-dairy alternatives like almond milk, oat milk, or coconut milk all work. Whole milk creates a richer drink, while skim milk produces a lighter version. Some people prefer non-dairy options for dietary reasons or personal preference. You can use either hot milk for a warm drink or cold milk for an iced version.

Equipment options vary based on what you have available. A hand mixer or electric mixer is the fastest way to whip the coffee mixture, typically taking 2-3 minutes to reach the right consistency. A whisk and bowl can also work, though this requires more manual effort and takes about 5-10 minutes. Some people use immersion blenders, standing mixers, or even milk frothers with success. In a pinch, a fork and bowl can technically work, though this is the most time-consuming method and may not produce ideal results.

Optional ingredients that people add include vanilla extract, cocoa powder, cinnamon, nutmeg, caramel sauce, chocolate syrup, or honey. These additions allow for flavor variations while maintaining the basic whipped coffee structure. Some people also add a small amount of salt to enhance the sweetness, following baking principles that have been used for decades.

Practical Takeaway: You need only instant coffee, sugar, and water to make whipped coffee, plus milk for serving. A hand mixer or whisk will do the whipping, and optional ingredients can add flavor variety. Most kitchens have these items already available.

Step-by-Step Instructions for Making Whipped Coffee

First, measure your ingredients into a bowl or container. Use 2 tablespoons of instant coffee, 2 tablespoons of granulated sugar, and 3 tablespoons of hot water. These proportions produce a medium-strength drink with balanced sweetness. If you prefer stronger coffee flavor, use 1 tablespoon more instant coffee. If you prefer less sweetness, reduce the sugar to 1 tablespoon. The water should be hot enough to dissolve the coffee and sugar but need not be boiling—water heated to about 160-180 degrees Fahrenheit works well.

Second, add the hot water to the dry ingredients and stir with a spoon until the instant coffee and sugar are mostly dissolved. This initial step helps the ingredients incorporate more evenly during whipping. Small lumps of undissolved coffee or sugar are normal at this stage.

Third, begin whipping the mixture. If using an electric hand mixer, set it to medium-high speed and whip for 2-3 minutes. The mixture will gradually transform from liquid to foam. It should become light in color, increase in volume, and develop a thick, mousse-like consistency. If using a whisk, whip continuously for about 5-10 minutes, moving the whisk in circular motions. The endpoint is when the mixture has tripled in volume and holds stiff peaks when the whisk is lifted out.

Fourth, prepare your milk in a separate cup or mug. Heat the milk if you prefer a hot drink, or keep it cold for an iced version. Fill the cup about three-quarters full. Pour hot or cold milk into your serving cup, leaving room for the whipped coffee topping.

Fifth, spoon the whipped coffee mixture over the milk. Use a spoon to transfer the foamy mixture carefully, as it is delicate and can collapse if handled too roughly. Aim for a thick layer of whipped coffee on top of the milk. The drink is typically stirred before drinking, which combines the whipped layer with the milk base.

Practical Takeaway: Mix instant coffee, sugar, and hot water, then whip with a mixer or whisk for 2-3 minutes until thick and foamy. Spoon this mixture over prepared milk to create the finished drink.

Tips for Achieving the Perfect Whipped Consistency

Getting the whipped coffee to the right texture takes practice, but several tips can help ensure success. The ideal consistency is thick, mousse-like, and stable enough to sit on top of milk without immediately sinking or collapsing.

One common issue is whipping too little, which results in a thin, liquid mixture that does not create the desired texture. If your whipped coffee looks thin and pourable after several minutes of whipping, continue whipping for another minute or two. The mixture should be significantly thicker and hold its shape when spooned. Some people describe the ideal texture as similar to a thick pudding or yogurt that holds peaks when a spoon is lifted out.

Another common issue is adding too much water. Some recipes call for equal parts coffee, sugar, and water by volume (like 2 tablespoons of each), while others call for more water. If you add too much water, the mixture will be harder to whip and may not achieve the right consistency. Start with the 2:2:3 ratio mentioned above, and adjust slightly if needed. Using less water makes the mixture thicker and easier to whip, while more water makes it lighter and more liquid.

The type of instant coffee affects the results slightly. Instant coffee that is finely ground whips better than larger crystals. If your instant coffee has large chunks, break them up with a spoon or crush them before adding water. Some brands are more finely milled than others, so consistency may vary between products.
