Free Guide to Growing Asparagus From Seed or Crown

Understanding Asparagus: The Basics of Growing This Perennial Crop

Asparagus is a perennial vegetable that can produce for 15 to 20 years once established, making it a worthwhile long-term investment for any garden. Unlike annual vegetables that need replanting each year, asparagus plants develop deep root systems and return reliably each spring. The plant grows from underground crowns—the root and stem base—that send up tender green or purple spears in spring. Understanding the fundamentals of asparagus growth helps you make informed decisions about whether to start from seed or purchase crowns.

Asparagus plants thrive in temperate climates and prefer areas with cold winters, as the dormant season is essential for next year's growth. The plant needs well-draining soil and full sun exposure—at least six to eight hours daily. Asparagus typically takes two to three years to reach full production capacity when grown from seed, while crowns can produce a limited harvest in year two. The plant's lifespan and productivity make it different from typical garden vegetables, requiring patience and planning.

The two main approaches to starting asparagus are growing from seed and purchasing one-year-old crowns. Seeds cost less per plant but require more time, as seedlings need to grow for a full year in a nursery bed before transplanting to their permanent location. Crowns are more expensive initially but cut one year off the waiting period before harvesting. Each method has distinct advantages depending on your budget, timeline, and gardening experience.

Asparagus varieties fall into three categories: green asparagus (the most common), white asparagus (blanched by covering emerging spears), and purple asparagus (sweeter than green). Popular varieties include Jersey Knight, Mary Washington, and Purple Passion. Knowing the variety matters because some perform better in specific climate zones, and your variety choice affects flavor, texture, and yield.

Practical Takeaway: Before starting asparagus, decide whether you want to begin from seed (lower cost, longer wait) or crowns (higher initial cost, faster production). Research varieties suited to your climate zone and determine if you have a location with full sun and well-draining soil where asparagus can remain for many years.

Starting Asparagus From Seed: Timeline and Process

Growing asparagus from seed requires planning because seeds need to germinate indoors before the last spring frost. Start seeds indoors 12 to 14 weeks before your expected last frost date. Asparagus seeds have a hard coating and germinate slowly, typically taking two to three weeks to sprout. Soaking seeds overnight or scarifying them with fine sandpaper can speed germination. Fill seed trays with moist seed-starting mix, place seeds about one-quarter inch deep, and cover with a humidity dome or plastic wrap to retain moisture.

Seeds germinate best at temperatures between 70 and 80 degrees Fahrenheit. A heat mat under seed trays helps maintain consistent warmth. Once seedlings emerge, remove the covering and place trays under grow lights positioned about three inches above the plants. Provide 14 to 16 hours of light daily. Keep soil consistently moist but not waterlogged—waterlogged soil causes damping-off disease, which kills seedlings at the soil line. Water from below by setting trays in water for 10 minutes, allowing soil to absorb moisture from underneath.

When seedlings develop their first true leaves (the second set of leaves that appear), thin them so each seedling has its own cell or pot. Crowded seedlings compete for light and nutrients, resulting in weak plants. At six to eight weeks old, when seedlings have several leaves and are three to four inches tall, begin introducing them to outdoor conditions through hardening off. Place trays outdoors in a sheltered location for a few hours daily, gradually increasing exposure to outdoor light and temperature fluctuations over one to two weeks.

After hardening off, transplant seedlings into a nursery bed in the garden or larger containers. Space them six inches apart in rows. Asparagus seedlings grow relatively slowly their first year—they'll develop a pencil-thin stem and a small crown. Water regularly during dry periods, providing about one inch of water per week. Fertilize monthly with a balanced fertilizer like 10-10-10 or one higher in nitrogen to encourage leaf and root development. Remove any flower spikes that form to direct energy into root development. By fall, these seedlings will be ready to transplant to their permanent asparagus bed.

Practical Takeaway: Starting asparagus from seed means counting backward from your last frost date to determine when to start seeds indoors. Use a heat mat and grow lights, keep soil moist but not waterlogged, and plan for a full year of nursery bed growth before the plants move to their permanent location. This approach costs less but requires more attention during the seedling stage.

Planting Asparagus Crowns: Selection and Installation

Asparagus crowns are one-year-old plants sold as dormant roots, usually available in early spring from garden centers and mail-order suppliers. When purchasing crowns, look for plump, firm roots with no soft spots, mold, or dried-out appearance. Healthy crowns have multiple buds at the base where new spears emerge. Crowns with thin, spindly roots or soft mushy areas indicate poor quality and lower success rates. Buy crowns from reputable suppliers who ship quickly to prevent roots from drying out during transit.

Prepare the permanent asparagus bed before crowns arrive. Asparagus grows in the same location for 15 to 20 years, so site preparation is crucial. Choose a location with full sun and well-draining soil. Test soil pH and aim for 6.5 to 7.5—asparagus tolerates a range but performs best in neutral soil. Improve heavy clay soil by mixing in two to four inches of compost or aged manure. This organic matter improves drainage and adds nutrients. Remove perennial weeds thoroughly, as they compete with asparagus and are difficult to remove once the bed is established.

Plant crowns in early spring, as soon as soil is workable—typically March or April in northern regions and January or February in southern areas. Dig a trench eight inches deep and 12 inches wide. Mix compost into the excavated soil at a ratio of one part compost to two parts soil. For single-row planting, space crowns 18 inches apart. For wider beds, space them in rows 18 inches apart and six inches from the edges. Create a small mound or cone of amended soil in each planting hole, then spread crown roots over the mound so they radiate outward—this positioning encourages spreading and strong growth.

Place the crown with its buds facing upward, positioned about two inches below the soil surface. Cover with amended soil, tamp gently to eliminate air pockets, and water thoroughly. Initially, keep soil consistently moist but not waterlogged for the first month after planting. Avoid harvesting spears the first year after planting crowns—the plants need to establish strong root systems. A light harvest in year two (cutting spears for two to three weeks) is acceptable, but full harvesting typically begins in year three.

Practical Takeaway: Inspect crowns carefully when they arrive—reject any with soft, mushy, or dried roots. Prepare your bed thoroughly by removing weeds and amending soil with compost. Space crowns 18 inches apart with roots spread over a small soil mound. Resist harvesting the first year to allow roots to become established, which ensures productivity for decades to come.

Soil Preparation and Garden Bed Design

Asparagus demands well-draining soil because standing water promotes root rot and fungal diseases. If your garden has clay soil that drains poorly, creating a raised bed four to six inches high improves drainage significantly. A raised bed also allows you to amend soil more easily than working with native soil. Line the raised bed with landscape fabric to suppress weeds, then fill it with amended soil. For in-ground beds, working compost and aged manure into the top eight inches improves both drainage and nutrient content.

The nutrient needs of asparagus change throughout its growth stages. At planting time, phosphorus promotes root development, so incorporate bone meal or a fertilizer with higher middle number (phosphorus) into planting holes. Once established, asparagus is a moderate feeder. Each spring as spears
