Understanding Skirt Steak: Cut, Quality, and Selection

Skirt steak comes from the diaphragm muscle of the cow, located beneath the rib section. This cut has become increasingly popular at restaurants and home grills over the past two decades because it offers rich beef flavor at a lower price point than premium cuts like ribeye or filet mignon. The muscle's constant movement during the animal's life creates a more developed, beefy taste that many grilling enthusiasts prefer.

When shopping for skirt steak, you'll encounter two main types: inside skirt and outside skirt. The outside skirt tends to be thicker and more uniform in shape, making it easier to cook evenly. The inside skirt is thinner and more irregularly shaped but can be equally flavorful. Most home grills work well with either variety, though the outside skirt requires slightly less attention to prevent overcooking the thinner sections.

Quality indicators include a bright red color, white fat marbling throughout the muscle, and firm texture. Avoid meat that appears dark red or brown, which suggests it has been sitting in the case for an extended period. A good skirt steak should weigh between 1.5 to 2.5 pounds and have visible grain lines running through it. These grain lines are important because they affect how you'll slice the meat after cooking.

The USDA Prime grade offers the most marbling and tenderness, while Choice grade provides good quality at a moderate price. Select grade contains less fat but can still produce excellent results on the grill when handled properly. Most grocery stores stock Choice and Select grades regularly. Budget approximately $6 to $12 per pound depending on your location and the store's quality standards.

Practical Takeaway: Purchase skirt steak that is bright red with visible white fat marbling, weighing 1.5 to 2.5 pounds. Outside skirt generally offers more uniform thickness for even cooking. Plan to use the steak within two days of purchase, or freeze it for up to three months.

Preparation and Seasoning Strategies

Proper preparation begins at least 40 minutes before grilling, though overnight preparation produces superior results. Remove the skirt steak from refrigeration and allow it to reach room temperature. This prevents the cold meat from cooking unevenly, which is common when cold meat hits a hot grill—the exterior cooks quickly while the interior remains cool. A steak that sits out for 40 minutes to an hour will cook more uniformly throughout.

Pat the steak completely dry using paper towels. Moisture on the surface prevents proper browning and creates steam that interferes with the searing process. Take time to remove all surface liquid, paying special attention to any liquid pooling in the meat's crevices. Some pitmasters recommend letting the dried steak sit uncovered in the refrigerator for 12 to 24 hours to further dry the surface, though this step requires planning ahead.

Trim any thick layers of surface fat, leaving approximately one-eighth inch of fat for flavor and protection. Skirt steak naturally has less fat than other cuts, so you won't need to remove much. However, if you notice any particularly thick silver skin (the tough connective tissue), carefully remove it with a sharp knife, as it prevents marinades from penetrating and creates a chewy texture.

For seasoning, a simple approach often works best with skirt steak. Coarse salt and fresh ground black pepper applied immediately before grilling enhance the meat's natural beef flavor without masking it. For more complex flavors, consider a dry rub applied 8 to 12 hours before grilling. Effective rub combinations include: cumin, garlic powder, smoked paprika, and cayenne for a Southwestern profile; coffee grounds, brown sugar, chili powder, and black pepper for a bolder approach; or simply kosher salt, pepper, garlic powder, and onion powder for a traditional American steakhouse taste. The salt in these rubs draws moisture to the surface initially, then reabsorbs it, seasoning the meat more deeply than surface seasoning alone.

Practical Takeaway: Remove steak from refrigeration 40 minutes to 1 hour before grilling. Pat completely dry with paper towels. Apply simple salt and pepper just before cooking, or use a dry rub 8 to 12 hours ahead. Trim thick surface fat and silver skin carefully.

Grill Setup, Temperature, and Direct Heat Technique

Skirt steak performs best with high direct heat, which creates a flavorful crust while keeping the interior medium-rare. Your grill type influences the specific temperature targets. Gas grills should be preheated to 450 to 500 degrees Fahrenheit with all burners running on high. Charcoal grills require building a hot fire with coals spread in a single layer across the grate, creating a temperature zone of 450 to 550 degrees. You can measure this by holding your hand about four inches above the grate—you should only be able to hold it there for 2 to 3 seconds before heat forces you to pull away.

Clean the grill grates thoroughly using a grill brush. Old food particles and rust interfere with browning and can impart unpleasant flavors. For a gas grill, brush the cold grates before lighting to remove debris, then brush again after reaching temperature. For charcoal, use a grill brush or crumpled aluminum foil held with tongs to scrub the hot grates. A clean grate is essential for proper searing and for preventing the meat from sticking.

Lightly oil the grates to prevent sticking and promote browning. You can do this by dipping a paper towel in vegetable oil and quickly rubbing it across the grates using tongs. Alternatively, hold an oiled paper towel to the grate for a few seconds. Avoid spraying oil over a flame, as this creates a fire hazard. The oil should create a light sheen on the grates without pooling.

Place the skirt steak directly over the hottest part of the grill. The high heat creates the Maillard reaction—a chemical process where proteins and sugars in the meat brown and develop complex flavors. This browning is the primary source of the steak's crust flavor and should be a priority. Resist the urge to move the steak frequently; allow it to sit undisturbed for 3 to 4 minutes on the first side. The meat will release naturally from the grate when a crust forms. If you try to move it before this happens, it will stick and tear.

Practical Takeaway: Preheat your grill to 450-550 degrees Fahrenheit. Clean and oil the grates. Place skirt steak over direct heat and allow 3 to 4 minutes on the first side without moving it. The meat will release from the grate when ready.

Cooking Time, Temperature Monitoring, and Doneness

Cooking time for skirt steak typically ranges from 5 to 8 minutes total, depending on thickness, grill temperature, and desired doneness. After the first side develops a brown crust (3 to 4 minutes), flip the steak and cook the second side for 2 to 4 minutes. Thinner steaks approaching one-half inch may need only 2 to 3 minutes on the second side, while thicker steaks can require 4 to 5 minutes.

The most reliable method to determine doneness uses a meat thermometer inserted into the thickest part of the steak, parallel to the surface. For rare, pull the steak at 125 degrees Fahrenheit. For medium-rare (the most popular doneness for skirt steak), aim for 130 to 135 degrees. Medium registers at 135 to 145 degrees, while medium-well reaches 145 to 160 degrees. Remember that the steak continues cooking after it leaves the grill—a phenomenon called carryover cooking—so removing it 5 degrees before your target temperature allows for this increase.

The touch method provides a secondary check without cutting into the meat. Relax your hand and touch the fleshy area below your thumb—this soft feel matches rare meat. Touch your index finger to your thumb; the slightly firmer feel matches medium-rare. Progress through your other fingers (middle for medium, ring for medium
